Recipe: Braised Pork Leg with Rice (Khao Kha Moo) (4 servings)
- Bring water to a boil. Add 1 pork leg (about 1.5 kg.) and boil for about 15 minutes to remove impurities. Remove the leg and set aside.
- Braised Pork Leg Sauce
- Bring 5 liters water to a boil. Add pre-boiled pork leg and the contents of this packet. Stir well.
- Simmer over medium heat for about 2.5 hours or until tender.
- Add Chinese Kale to blanch and turn off the heat.
- Chop pork leg into pieces and serve with steamed rice, cut blanched Chinese kale, boiled egg, pickled mustard greens, chilli vinegar and garnish with coriander leaves as desired.
Tips: Pork belly or pork feet can be used instead of pork leg.
Recipe: Chilli vinegar
Blend or pound 8 red bird’s eye chilies and 8 garlic cloves coarsely. Transfer to a bowl, add 2 tablespoons sugar, 2 teaspoons salt, and 1/2 cup vinegar. Mix well.
