Crispy pork fat (กากหมู), known as Gaak Moo, is made by frying pork fat until the pieces become golden and crunchy. Rich and savoury, it is ideal for sprinkling over noodle soups, dry noodles and rice dishes for extra texture and flavour, or enjoying as a crunchy snack.
